Indian Red Lentil Fritter Protein Bowl

You know what gets me excited? Bowl food. ¬†The best kind of food requires a bowl! Cereal, Ice cream, soup and pudding just to name a few. ¬†It’s also just so convenient, take stuff you have and just dump it into a bowl, garnish with some parsley and voila, you have yourself a fancy meal.

Since becoming pregnant I’ve become the messiest eater in the world, nothing seems to want to make it into my mouth or stay on a plate, at least now I don’t have the big belly that things can just bounce off of. ¬†Bowl food makes things a little less messy and its harder to get a baby foot in a bowl than it is getting it on a plate.

Obviously you can see that my love for bowl food runs deep! My go to recipe is my amazing falafel bowl recipe, but when I don’t have tahini on hand I love my Indian inspired bowl.

This bowl is filled with grains, legumes and a whole lot of vegetables, that’s all you need for an amazing protein bowl recipe anyways, right, but this one gets topped with a wonderful nectarine sauce to balance out all the delicious flavours that this recipe consists of. ¬†The yum factor is over the top!

INDIAN RED LENTIL FRITTER PROTEIN BOWLserves 4

Ingredients

Red lentil Fritters

  • 3/4 cup red lentils, rinsed and soaked in a cup of water for 3 – 4 hours or overnight
  • 1 cup spinach, washed
  • 1/2 tsp cayenne pepper, or more according to your taste
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp turmeric
  • 1/2 tsp baking soda
  • salt and pepper to taste, I’m quite heavy handed with my salt to really get a taste going
  • 1/2 cup fresh cilantro
  • oil for frying

Roasted Carrots and Beetroot

 

  • 2 large carrots, peeled and chopped
  • 2 large beet peeled and diced
  • 2 tbsp oil
  • 1 tsp garlic powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp turmeric
  • 1 tbsp fresh turmeric chopped
  • half a lemon
  • salt and pepper to taste

Turmeric Rice

  • 2 cups cooked brown rice
  • 1 tbsp oil
  • 1 clove garlic
  • 1 inch ginger minced
  • 1 tsp ground turmeric
  • salt and pepper to taste
  • 1/4 cup of water

Nectarine dressing

  • 1 nectarine, chopped
  • 3/4 cup coconut yogurt ¬†or yogurt
  • zest of half a lemon
  • half a lemon juiced
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1 tbsp fresh coriander chopped
  • 1/2 tbsp liquid sweetener

Assembly

  • chopped red cabbage
  • Chopped fresh coriander

Directions

Preheat oven to 180 degrees C /  425 degrees F

Red lentil fritters

Drain the red lentils well and rinse.  Place all the ingredients into a blender and grind until smooth-ish, with some grit to them.

Heat oil in a large frying pan over medium high heat.  Form little 1 tbsp disk with your hands and drop into the oil.

Fry until golden brown on both sides.

Place on paper towel.

Roasted Carrots and Beetroot

Mix everything in a bowl until well covered and place on a baking sheet.

Bake for 20 minutes or until tender.

Turmeric rice

Add the oil to a pan and saute the garlic, ginger and turmeric.

Add the rice and water and season with salt.  Stir.  Its ready when the water is evaporated.

Nectarine yogurt dressing

Place everything in a blender and blend until smooth

Assembly

In a bowl add 1/2 cup of rice, roasted vegetables, chopped red cabbage, red lentil fritters.  Drizzle with dressing and garnish with coriander.  Serve

My home birth story : The Fast Birth of Arren Yuki

The birth of Arren sure will be a memorable one.  This little guy has had spunk since inside the womb.  From taking his sweet time to get out of the breech position, making his mommy crawl around on a carpet every day, doing obscene poses to nudge him into the right position.  He eventually decided to flip into the right position for birth after that it was all smooth sailing until my due date and he decided  that he was just so comfy in the womb that he just did not want to come meet us! This little guy has some serious attitude and we just love him for it.

My due date came and went, and I started realising, that baby will come when baby is ready! I tried all the little labour inducing tricks, with no luck at all and decided to just be patient. ¬†Until….the new year came rolling in and I still had no baby?! Even my midwife was getting worried and asked if it was time we tried the castor oil method. ¬†I was really apprehensive of taking castor oil, because I just wanted baby to be completely ready to meet us and not have any problems once he was out. ¬†The night before we saw and felt the baby doing his practice breathing, and I just felt like taking the castor oil would just not be right. ¬†We scheduled an appointment with the midwife for the next day, but I just knew that baby would be here soon.

On 2 January 2017 we watched a show in bed and fell asleep. ¬†I was actually having such a lovely sleep dreaming about essential oils when at 2:05 am 3 January, ¬†I woke up to my water having broken. ¬†Man, it was such a weird feeling. ¬†I just remember getting woken up and saying “oooh”. ¬†Carl woke up ( hes been on high alert for weeks and every sound I made would put him in “It’s ¬†go time” mode) and asked me whats wrong, as I walked to the loo, ¬†I say walk, but it was more of a weird wobble, trying not to dirty everything in the beginning…I told him my water broke, we both could just not stop smiling as we knew it was baby time soon. ¬†I decided to take a shower and get myself cleaned up as I prepared for what I thought would be a marathon labour.

We went downstairs had some tea, while I prepared snacks and treats for the midwives and Carl. ¬†At this point I had no contractions…..As we talked, while drinking tea, I kept bouncing on my exercise ball and then….my water broke again……….this time with even more force…..I was so shocked, firstly because I just changed my clothes and secondly because my water broke again?!

I went upstairs to go change again and ran down only to have MORE water come out…..at this point I just couldn’t believe how much water was in my body…. and how much clothes I’ve gone through without any contractions. ¬†At 3:15 am contractions started. ¬†I downloaded this contraction timer app and it was just the best thing ever! It gave Carl something to do, without me hating on him for asking stupid questions. ¬†We called our midwife and we all decided she could wait a little bit before coming over..I could still easily talk through contractions and we were all preparing for the long haul.

I asked Carl to bring me two blocks of ice I ate one without a problem and threw the other one at Carl because it wasn’t a good size…..Yeah, labour brings out the monster in you.

The contractions were getting more and more intense. so I decided to get some relief from the pain in the shower….at one point I wanted to live in the shower, we called our midwife and told her its time to start heading over. ¬†I still didn’t feel like I was going to have the baby any time soon.

Soon after that everything started feeling way more intense, I remember thinking if I still have 5 – 12 hours left of this labour I’m just not going to make it, the sweet, sweet release of painkillers were looking pretty good to me right then. ¬†I kept thinking transition would be way more intense. so I didn’t even realise I was in the transition stage at that point.

Carl called the midwife again at that point because he was getting freaked out by my intense labour grunts……..I felt an insane need to push and felt down only to feel baby’s head.

I felt my entire body felt relieved and I just had this natural instinct that washed over me. ¬†As I shouted at Carl that the baby is here. ¬†He decided it was time to phone the midwife again to tell her what I said. ¬†I rushed out of the shower and felt like I needed to push. ¬†I pushed down once and felt the baby’s head coming out, I kept thinking I’m not stopping until his head is out. ¬†I screamed at a shocked Carl to get a towel as he ran the wrong way, ¬†I shouted again that its behind him. ¬†I told him to get ready for the baby as I gave one more push. ¬†Carl caught baby Arren at 4:20 am.

 

We were both so shocked at what just happened that we just sat there looking at our perfect baby that had a good cry and stopped as soon as he was in my arms. ¬†We just sat there crying saying how beautiful he is for what felt like an eternity……after the shock wore off I realised I was in a squat position not knowing what to do now…..we were both trying to figure out the placenta cord and if I could sit on it or not. ¬†We decided that staying in that position was safer.

Carl went to open the door for the midwives and a whole wave of relieve washed over me they instantly made me feel calm and relaxed. ¬†I was so happy to see them because I just didn’t know what to do next….I mean you plan for your baby not the placenta?

They helped me get up, made the bed extra comfy for me and baby and got us settled. ¬†They gave me angelica drops to help get the placenta out, but I was just so done with pushing. ¬†I was on one chilled out boat that would have ripped out the placenta at this time just so I wouldn’t have to push anymore.

I got into the squatting position and the placenta just dropped out.

 

He came out a whopping 3.89kg/8 pounds! 55 cm /21 inches tall and a head size that felt way bigger of 35 cm.  He also got a 10/10 on his apgar score! Our healthy little chub monkey.

Hes just been pure bliss to have around.  Its been hard at times, but everything is just worth it to see his little face.

We decided on the name Arren Yuki, before we ever started trying to have a baby.  We actually have names ready for all our future children.  Yeah we are those people!  Arren means mountain warrior and Yuki means snow in Japanese.  Our little baby was conceived in Ireland and the mountains that surround this beautiful city made our hearts race, and finally made us feel like we found the perfect home for us, in the most beautiful country to us.  We chose Yuki as his second name because we were looking for snow all over Dublin and finally found it walking through Tick Knock forest, it was around that time we conceived little Arren. Japanese people also believe that your name reveals a part of your soul so our little snowflake will always be something special to us.

I never want to forget the day my heart grew so much bigger and that’s why I’m sharing it here.

P.S eating 6 dates a day really did give me a fast labour.

Chocolate Pregnancy Shake

Yes, I’m still pregnant and after a very positive midwife appointment I’m feeling really good again. ¬†Baby is in a good position, I’m healthy, baby is not too big and the midwife and I both decided that baby should come when the baby is done developing and is ready to face the big scary world. ¬†While I wait I’m just going to get enough sleep, meditate and go for walks until baby is ready to meet us.

I feel healthier than ever during this pregnancy, I’ve really been making a conscious effort to eat healthy, avoid anything that doesn’t ¬†make me feel like the glowing pregnant woman I deserve to be and just give my baby the best food I can possibly give him/her. ¬†I’ve mostly just been craving sweet delicious things this pregnancy, which has been strange for me, because I’m more of a savoury kind of gal, but I felt like a fruit junky and have had weird cravings for donuts and cake. ¬†You don’t know how strong you are until you prove to yourself that you WONT touch that cake. ¬†To keep my sugar cravings ¬†in control, I came up with the most delicious medjool date chocolate shake, filled with good for you ingredients, protein and all those yummy dates that’s suppose to help shorten your labour, ¬†whats not to love and I mean it just tastes so good. ¬†Way better than the best chocolate shake I’ve ever had and that’s saying something, because this is the best chocolate shake I’ve ever had.

WHY EAT DATES DURING PREGNANCY

The number one reason should be that its really delicious! filled with nutrients, fibre (what every pregnant woman needs more of), a great source of potassium , iron, anti oxidants and helps regulate blood pressure.  It will also give you that energy boost you so desperately crave during pregnancy, but even with all those amazing benefits the best thing about dates for a pregnant lady is.

It will help shorten labour.  Yes, you read that right!  Women who ate 6 dates a day during their ninth month of pregnancy had good progression during labour.  They were also more dilated on arrival to hospital and laboured for 7 hours or less.  Dates have a compound in them that mimics the hormone oxytocin  which causes contractions.

Hopefully all my religious date eating pays of during labour.

CHOCOLATE PREGNANCY SHAKEserves 2

Ingredients

  • 4-6 medjool dates pitted
  • 2¬†large frozen banana, peeled and chopped before freezing.
  • 1 and 1/2 cups non dairy milk
  • 1 tsp cinnamon
  • 2 heaped tbsp protein powder
  • 2 -4 tbsp cocoa powder ( depends how chocolately you like it)
  • 1 tbsp Chia seeds – optional
  • ice

Directions

Place everything in your blender and blend until smooth.

Pour into glasses and enjoy.

Healthy Date Squares (sugar free, gluten free, vegan)

Date squares are one of those recipes that make me think about my grandmother, she would always have date squares, fig bars and jam cookies at her house and as a snooty little kid, I always wondered what her deal was. ¬†I mean where is the chocolate? why is she always shoving a jam like spread in all the sweet things and why can’t we just dip this in chocolate? I remember never wanting to try her “healthy” weird things, but when I got older I tried a date square and man oh man! did I love it! the sweetness of the dates with the buttery crust had my head spinning in a whirlwind of love. ¬†Back in the day I classified that as me being healthy, and with such large quantities of sugar and butter, you know its really not that good for you.

As I’ve been trying to eat my large quantities of dates a day for an easier labour ( I’ll let you guys know if it works) I’ve gotten really tired of eating it in oats or smoothies. ¬†I just started not being able to hit my date quota, so these little healthy date squares are my solution! ¬†They are a tasty healthy treat filled with good for you ingredients, made with a small amount of sweetener in the crust, because come one guys! Dates are sweet enough! and coconut oil instead of butter. ¬†its the perfect little grab and go snack that everyone will love.

HEALTHY DATE SQUARES16 squares

Ingredients

  • 2 cups rolled oats ( gluten free)
  • 1/2 cup ground flax seeds ( I just add flax seeds to the rolled oats while blending it to give it a nice roughage kind of consistency)
  • 1/4 cup melted coconut oil
  • 5 tbsp liquid sweetener
  • 1/2 tsp cinnamon
  • 1/2 tsp xantum gum
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 2 cups pitted dates
  • 1 tsp vanilla
  • 1/2 cup boiling water

Directions

In a bowl add the dates, 1 tsp vanilla and boiling water.  Stir around until covered.  Let sit.

Preheat oven to 350 degrees F/ or 180 degrees C.

Add the oats, flax seeds, cinnamon ¬†and salt to a food processor. ¬† Process until you’ve reached the consistency of a wholewheat flour, not to flour like.

Add the sweetener, xantum gum, vanilla and coconut oil.  Pulse until it forms a dough.

Grease a pan.  Take 2/3 of the dough and press it tightly into the pan, making sure its nicely pressed.  Wipe down your processor and add the dates mixture,   Pulse until smooth.

Spread the date mixture over the oats mixture, spreading evenly.  Take the rest of the oat dough and spread it over the date mixture and keep pressing it down.

Bake for 20 Р35 minutes or until lightly golden all over.  Remove from oven and let completely cool before cutting.  Serve.

Healthy Chocolate Coconut Overnight Porridge ( Vegan / Gluten Free)

I’ve been on a serious breakfast kick lately. ¬†Give me anything that’s fast, that will keep me going until the afternoon and I’m willing to give it a try. ¬†Right now I’m in the serious grazing part of my pregnancy, I never feel completely full and I’m always on the look out for my next snack and when I can’t have it immediately I feel like a complete wreck. ¬† If it didn’t make me feel like a completely irrational drama queen you would probably find me curled up in ball wondering what did I do to deserve such a food-less world even if the fridge is completely stocked, I just have to make something.

That’s why I’ve been going crazy for anything overnight, put things in a jar, shake it up and forget about it until morning. ¬†At one point I felt like I was a little bit too addicted to my iron rich overnight oats, instead of calling the overnight oats helpline for addiction I decided I need to add some variety to my mornings, but yet be filling enough not to make me sulky in public when I get hangry 15 minutes later, it should be filled with protein and just make me feel good while eating it. ¬†That’s how this gluten free, coconut flour, chocolate-y slice of heaven in a jar was created. ¬†Filled with a whole lot of good for you ingredients, like ground flax seeds, chia seeds, banana, protein powder and really yummy coconut flour, how can you go wrong with something that’s just so right.

Coconut flour overnight porridge

A word of advice, don’t be all willy nilly with your coconut flour, otherwise you might end up with coconut flour-aggedon. ¬†The one evening I felt a little tired and didn’t count my tbsp properly, and because ¬†coconut flour is just as hungry as I am, I ended up with 3 days worth of porridge for 2 people. ¬†I wasn’t complaining.

CHOCOLATE COCONUT FLOUR OVERNIGHT PORRIDGEserves two hangry people

Ingredients

  • 4 tbsp coconut flour
  • 3-4 tbsp chia seeds ( depends how thick you want it
  • 1 tbsp ground flax seeds
  • 1/8 tsp Himalayan salt
  • 1-2 tbsp cocoa powder
  • 1 tsp vanilla
  • 1 overripe banana, mashed into a puree or a normal yellow banana blended smooth
  • 2 tbsp hemp seed powder (optional)
  • 1 cup non dairy milk
  • 3/4 cup water
  • sweetener of choice ¬†( I cut up some dates really small or add a couple of dates while blending the banana for a sweetener)

Directions

Mix the dry ingredients into a big enough jar, or two smaller jars.

Stir in the milk, water, banana and vanilla.  Stir well until all the coconut flour clumps are gone.  Or shake vigorously with the lid tightly sealed.

Place in the fridge overnight.

Coconut flour Overnight Porridge

Remove from fridge, if its a little bit too thick add more milk till desired consistency and serve with your favourite porridge toppings, I would suggest a drizzle of nut butter, almonds, yogurt, fruit and a drizzle of sweetener. ¬†Sit back and enjoy your healthy, yet decadent dessert….. I mean breakfast.

Tips for dealing with stress during pregnancy

We all experience stress in our lives from time to time, but constant stress is not healthy and stressing during pregnancy can be linked to preterm labour and a lower birth weight, I seriously read that and think “I can’t believe with statements like that, that everyone expects me to be calm”. ¬†Stress during pregnancy is just the worst, because most of the time with the insane amount of hormones swimming around your body trying to make you emotional for silly things you end up crying and feeling horrible about everything. ¬†I’m your typical type A personality and we all know that stands for typical type Anal about everything personality. ¬†I like things to get done and when it doesn’t I start wondering how people can live in such an unorganised world! ¬†but the world is unorganised and that’s one of the reasons its a wonderful adventure to be on, so here is some of my tips to just relax and de-stress yourself during pregnancy.

TIPS FOR DEALING WITH STRESS DURING PREGNANCY

  1. Relax: This is one I have a hard time with, there is just so much to do all the time and allowing myself some time to unwind when so much still needs to get done has been hard. ¬†Sometimes I kind of forget I’m pregnant, but pregnancy is hard on your body and its just something you have to embrace. ¬†Enjoy some me time, put your feet up and forget about everything that needs to get done. Tomorrow is another day!
  2. Get outside: ¬†I’ve traded in my pregnancy workout for daily walks instead. ¬†Getting outside when I can really gives me some time to clear my head. ¬†The fresh air seems to clear up any mind fogginess.
  3. Ask for help: Your husband/partner/friend is not a mind reader, most of the time they can’t tell we need help; especially if we keep going on like we’re completely fine. ¬†Ask your husband for a little more help around the house or anything you really need, they will understand and be happy to help. ¬†I’ve been having moments when I’m just too tired to make dinner after a long day, at first I got angry at the fact that Carl can’t make anything edible, after that I decided to teach him how to cook and the basics of cooking. ¬†It seems like a lot of work, but he seems to be enjoying it and I get to delegate and help him be able to feed himself a healthy meal when I’m not around. Every problem has a solution when you have a clear head and don’t get mad about it. ¬†Figure it out!
  4. Meditate: Meditation is a hard one for me, I can never get my mind silent enough to be able to just relax! Somehow, lately with construction happening in the front of us and to the side, with the loudest construction workers screaming at each other and my peak stress level jumping through the roof I managed to do my own kind of meditation. ¬†I put on some music and just have a moment on my yoga mat, doing some prenatal yoga, and a little bit of mind clearing meditation. ¬†Find your own kind of meditation, for some people its getting in the zone and cleaning their house, who knows how you can personally find your inner peace. ¬†I feel like I’m becoming a true yogi with that statement. ¬†Namaste.
  5. Treat yo’self: ¬†With everything revolving around your unborn child at the moment its easy to forget to take care of yourself. ¬†It can be something as simple as taking a hot bath and just relaxing or it can be buying yourself something that makes you feel beautiful while being pregnant ( sometimes that feels like a difficult task). ¬†For me it was splurging on a pair of amazing maternity pants, that actually fit properly and doesn’t have that hint of hideousness that comes with maternity clothes.
  6. Educate yourself: Read all the books, google, google, google, talk to friends with babies or your midwife/obgyn, just find out everything you need to know or are concerned about. ¬†At the same time, don’t get too scared about the what if’s, because the internet will always tell you something simple is a tumour, educate yourself, but take everything with a grain of salt. If you’re concerned ask your obgyn, they will most likely put your mind at ease. ¬†Now go feed your growing tumour baby. ¬†Thanks internet.
  7. People will give you their advice: ¬†Sometimes the biggest stress is a good meaning, slightly mean person who tells you what you’re doing is wrong, trust that what you’re doing is the best way for YOU and do it! ¬†Laugh all the silly comments off.
  8. Avoid trigger people or situations: if you feel overly stressed out around a certain situation, avoid it! Be a little selfish, you are growing a baby! This is the time you should easily be able to avoid something for the good of your baby and yourself.
  9. Talk to someone: Sometimes the best thing you can do is just talk to someone you trust about all your concerns, get it all out and let them tell you, you’re being silly.
  10. Eat a balanced diet: Drink plenty of water during pregnancy to lessen pregnancy symptoms, eat food that will make you feel good, instead of feel good right now.
  11. Trust that everything will work out the way its supposed to.  Believe in Gods plan and have faith in yourself.

Electrolyte Almost Instant Lemon Ice Cream

Lemon ice cream sure doesn’t have the same ring to it as lemon sorbet does? Is it just me or does it just sound completely wrong? Lemon Ice cream kind of sounds gross, but lemon sorbet….Man, now that sounds refreshing. ¬†After everything I just said I still decided to go with lemon ice cream in my title, because this is just so much more than a silly sorbet. ¬†Its creamy, filled with flavour and comes together almost instantly, if like me you always have a crazy amount of bananas in your freezer, please tell me I’m not the only one! ¬†I love having frozen banana chunks readily available, who knows when I feel like a cold smoothie, ¬†I ¬†want to chomp on a frozen banana or when I crave some delicious nice cream. ¬† When those days hit, I’m always prepared with all the bananas you will find in my freezer.

I’ve had a couple of days where I’ve suffered from some low blood pressure during this pregnancy. ¬†Its usually when I’ve gone for an unplanned longer than usual walk or forgot that adding salt to your food is a good thing. ¬†In those instances I’ve even been tempted to look twice at an electrolyte drink. ¬†Electrolyte drinks are just filled with so many things that I don’t even like looking at and is just a whole lot of sugar. ¬† When in fact we just need to replenish our body with a little bit of salt, specifically our bodies need the ions in salt. Electrolytes are important, because they are what your cells use to maintain voltages across the cell membranes and to carry electrical impulses to other cells. ¬†When we exercise a lot we usually lose sodium and potassium in our sweat and this little frozen treat is made up of those two vital ingredients.

ELECTROLYTE LEMON ICE CREAM Р serves two or one little greedy goose

Ingredients

  • 2 large frozen bananas, peeled and chopped before freezing (freeze bananas overnight)
  • 1/2 lemon juiced and zested
  • 1/2 tsp vanilla extract – optional
  • 1/8 tsp Himalayan pink salt or Celtic salt

Directions

Place all the ingredients in a blender and blend until smooth and the consistency of soft serve.  Garnish with added lemon zest and serve.  YUM!

What I ate: 31 Weeks Pregnant

I’ve been TIRED lately! Like getting up in the morning only to want to get back into bed kind of tired. ¬†I really don’t have a reason to be tired except I’m making a human that loves to kick me from all angles. ¬†I swear this baby just loves to flip around and kick me in new and interesting places all the time. ¬†We’ve started going for early morning walks around our neighbourhood to get some time together and really enjoy the outdoors before it gets unbearably hot. ¬†On our little walk we discovered the cutest little park, if it wasn’t for all the tagging on everything, it would look like the most magical park in all the land. ¬†Little squirrels and cute little fluffy animals running around playing on the big trees, green grass that you just want to roll in an regret later and a large slide that I want to take for a spin!

I’m still feeling pretty good, I mean I’m tired, but I’m not exhausted. ¬†Its a bearable tired that hits me occasionally, in reality I’m getting off lightly!

I’ve been feeling like a ball of stress and realised its not good for me or the baby, so I’m avoiding stressful situation and trying to meditate away everyone’s little pregnancy pokes. ¬†Lets get to what I’ve been eating.

BREAKFAST

^^ Not surprising, I’ve still been on my Iron rich overnight oats kick and Moringa coconut chia overnight porridge kick lately.

^^ See I add more variety to my breakfast.  To the left raw buckwheat porridge with fruit, this is one of my favourite breakfast of all time now! To the the right a power green smoothie bowl topped with chocolate buckwheat granola, fruit and coconut.

Snack:

If I get snacky I still grab my omega peanut butter with added flaxseed oil for a little pick me up.

Dinner

^^ Dinner has been a whole lot of different things to the left a really  veggie cottage pie with spouted lentil a whole lot of veggies and topped with a broccoli, cauliflower and kale pureed topping.   To the right: a falafel bowl with spouted chickpeas, a homemade tahini dressing, salad stuff and a cauliflower kale rice.

^^ Other nights we had a healthy sweet and sour stir fry with carrot noodles and a rocket, baby spinach nectarine salad to go with sprouted red lentil fritters.

^^ I’ve been making some healthy snacks on the go for quick snacking. ¬†On the left a gluten free, sugar free black bean, chia seed and hemp protein bar. ¬†So amazing! and to the right a flax seed date and black-strap molasses square, so good and even better for you, an easy way to get my 6 dates a day in.

^^ I finally found some watermelon and it was just the best thing ever! Now if I could only find mangoes my pregnancy cravings will be satisfied.  I also enjoy my little rooibos latte here and there.

Vegan Protein Shake

^^ Our blender has been acting up again, I guess its not suppose to withstand the daily abuse I put it through. ¬†So I’ve been having my Protein shake whenever I can. ¬†I get sad when I can’t have it everyday.

I’m feeling prepared mentally and physically for my home-birth and I’m getting more and more excited everyday to meet our little baby! ¬†Just need to finish the last bits of things and it will be smooth sailing from here on out!

 

Creamy Cauliflower Leek Soup

Before I met Carl, I never knew people could be allergic to potatoes. ¬†It just seemed like something so obscene to be allergic to? In so many households potatoes are a staple ingredients and can be served in a plethora of¬†¬†meals. ¬†The potato is just so versatile! but from what I’ve learned from completely cutting out potato from my diet , in a stance against silly allergies and so Carl wont feel tempted and be forced to suffer the consequences of eating delicious potatoes because I’m having it ; is that potato is a sneaky little fiend that really loves to keep extra pounds on your body. ¬†When I cut potato out of my diet I started noticing my stomach bloat going away, unwanted pounds slipping away in stubborn areas, like my face and stomach and my skin felt and looked clearer. ¬†Cutting out potato in the long run just made me feel so much better and I’m glad I can come up with healthier alternatives now.

Its been fun coming up with potato free recipes and surprising my little potato allergy weirdo with things he can eat and that tastes just as good.  Baked potato, how about a baked sweet potato! Crisps, try some vegetable crisps instead, mashed potatoes? Lets just replace it all with Cauliflower!

Surprisingly Cauliflower is the perfect substitute for potato, its got a creamy silky texture and is neutral in taste, but the best part about cauliflower is that its just so much better for you !  Cauliflower is filled with nutrients, minerals and antioxidants that can help you fight cancer cells from forming, boost your heart and brain health, is an anti inflammatory and its high in fibre. 

This soup is really nourishing and perfect for a cold crisp evening meal, its filled with leeks and garlic that’s great for preventing colds and will aid in your bodies detoxification needs. ¬†Keeping you healthy and strong!

CREAMY CAULIFLOWER AND LEEK SOUPserves 4 Р6 

cauliflower leek soup

Ingredients

  • 1 medium cauliflower head, washed and cut into florets
  • 2 leeks, white and green parts only chopped
  • 2 cloves garlic, peeled and chopped
  • 1/2 tbsp coconut oil
  • 3 bay leaves
  • 3 1/2 cups vegetable broth
  • 1 – 1/2 cups of coconut milk
  • salt and pepper to taste
  • chives for garnish
  • sprinkle of cayenne pepper for added heat.

Directions

In a large pot over medium Рhigh heat add the coconut oil, leeks and garlic.  Saute until soft and wilted ( stir constantly).

Add in vegetable broth, bay leaves and cauliflower.  Reduce heat to a simmer and cook for 20 Р30 minutes until the cauliflower is soft.

Discard the bay leaves.

Let cool slightly, add coconut milk, salt and pepper and blend until smooth.  Adjust season and serve with chives.  Add more water if you desire a less thick consistency.

Healthy Salted Date Caramel Sauce

I’ve been loving my healthy treats lately, its been a strange thing for me, because I don’t really like sweet treats. ¬†The things you will like during pregnancy might startle you and make you worry about who you’re turning into!

I’m usually a rather nice person, and I watch Carl eat something in one sitting, but lately I’ve felt a lot of resentment towards the fact that he can’t control himself and eats most of my special really dark chocolate, in such a short period, where I try to make every block last and practice self control. ¬† ¬†I actually went to bed angry thinking about the fact that I didn’t have a little block of chocolate, the irrational anger is real guys. ¬†We think pregnancy is tough on us, but what about our poor husbands, or partners just getting caught in the crossfire of our irrational emotions or maybe they should just leave our special treats alone!

This salted caramel date sauce is amazing! I’ve been using it in everything! Seeing as I’m trying to eat 6 dates a day for a better labour, and my blender doesn’t want to properly blend in the dates in any of my smoothies; ¬†This sauce is my special way of sneaking in delicious dates into my diet, that feels so decadent, but is so much better for you than normal caramel sauce. ¬†I’ve been using it in my overnight oats, overnight coconut porridge, for my frozen salted date banana bites, as a dip for fruit, swirled into banana nice cream and as an extra special something to my rooibos latte. ¬†The possibilities are endless!

HEALTHY SALTED DATE CARAMEL SAUCE

Ingredients

  • 1 cup dates, if they don’t seem soft, or you have a bad blender soak them in warm water for 15 minutes and discard water.
  • 1/4 tsp ground Himalayan pink salt
  • 1/4 or more non dairy milk. ¬†If you like it a little runnier add more milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp caramel extract – optional, but adds extra caramely goodness.

Directions

Blend everything together in a blender until its smooth and has reached your desired consistency.   Serve with apple slices, or refrigerate
