Spiced Carrot Steaks

I like a good deal,  I like a deal so much that I will leave a store with way too many carrots, while I have carrots growing in my garden.  I’ve been juicing them, putting them in smoothies and just doing everything I possibly  can with carrots lately, but don’t you worry I’m not running out of carrots any time soon.  That’s how many I bought.  Now that you have an idea of my carrot crisis.  Lets get to a carrot recipe.

This carrot steak is perfectly spiced and just the prettiest thing to put on your plate.  Its also really fast to make and exploded with flavour.


Carrot Steak


  •  3 carrots, peeled and sliced in half length ways.
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp cayenne pepper
  • 1 tsp parsley flakes
  • salt and pepper to taste
  • 2 tbsp coconut oil

Preheat the oven to 356 degrees F/ 180 degrees C.

In a small bowl combine the garlic, paprika, cumin, coriander and parsley.

Rub the spice mixture on the carrots and place on a baking sheet.  Drizzle with oil and season with salt and pepper.

Bake for 30 – 40 minutes.  Flip half way.  Remove from oven and serve.
