These cupcakes are so easy and delicious that they are dangerous. You can literally make it any time a chocolate craving hits, even when you think you don’t have the ingredients on hand.
Carl and I are doing seven days of salad. We decided to get our salad on for a week, in an effort to eat healthier, but before the week started we celebrated the start of it with cupcakes.
Delicious, delicious cupcakes. Chocolate cupcakes that are so moist they basically melt in your mouth. In my opinion having a cupcakes before a week of salads is just a must.
These cupcakes are so easy to make they don’t require any eggs, milk or milk substitutes. It’s the easiest cupcakes you will ever make, and you won’t even miss the other ingredients. It’s a perfect valentines day treat, for kids and adults alike.
EASY CHOCOLATE CUPCAKES – 12 cupcakes
- 3 cups flour
- 1 cup sugar
- 1/2 cup cocoa powder
- 1/2 tsp salt
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tbsp vanilla
- 2 tbsp vinegar
- 3/4 cup oil
- 2 cups water
Preheat the oven to 180 degrees C/ 350 degrees F
In a large bowl combine the flour, sugar, cocoa powder and salt. You can sift it if you want I never do. Add the baking soda and powder. Pour the vinegar over the baking soda.
Next add the vanilla, oil and water and stir until just combined.
Pour into greased muffin tins and bake for 20 – 30 minutes or until a toothpick inserted into the middle comes out clean. Remove from heat and let cool completely .
EASY CHOCOLATE FROSTING
- 2 cups icing sugar
- 6 tbsp cocoa powder
- 5 – 6 tbsp margarine or butter
- 1 tsp vanilla
- 2 – 5 tbsp milk
Sift together the icing sugar and cocoa powder. Add the rest of the ingredients and cream together until lump free. Frost the cupcakes and add a slice of strawberry.
