Vegan Waffles and Fry’s vegetarian Nuggets

Waffles are a firm favourite in this house, we find them more superior than the humble pancake, but that’s just because we LOVE SYRUP, and with the waffle you get little dams worth of syrup catchers.

Even the youngest family member is a fan and when I added Fry’s vegetarian nuggets to his waffles his mind was just blown! It’s definitely a special day treat, but we felt like celebrating so what better way than with waffles and nuggets!

These waffles are perfect for vegans and egg and dairy allergy sufferers, they are soft, chewy and crispy all the things you want for your waffle and if you’re dealing with a picky toddler you can just do what I do, grate a whole bunch of veggies into the batter, this specific waffle contains broccoli, cauliflower and carrot, because I wasn’t in the mood for another food battle, instead I got sneaky.

VEGAN WAFFLES AND FRY’S VEGETARIAN NUGGETS –  6 waffles

Ingredients

  •  1 1/4 cup all purpose flour ( I used wholewheat flour)
  • 1 tbsp baking powder
  • 1 tsp vinegar
  • 1/4 tsp salt
  • 1 tbsp sugar or liquid sweetener
  • 1  1/4 cup water
  • 2 tbsp oil
  • 1 tsp vanilla

Directions

Put your waffle maker on to preheat.

In a large bowl add the flour, baking powder, sugar and salt.

Add the vinegar, oil, vanilla and water.  Mix until well combined and not lumpy.

When your waffle maker is heated pour the batter ( recommended by waffle maker) , and close the waffle maker.

Cook for 5 – 7 minutes.

Serve with fry’s nuggets or what ever topping your heart desires, but don’t forget to drizzle with a crazy amount of syrup.
