One of the things that made me fall in love with Carl was our shared love for mint chip. When we were dating we shared a lot of minty things and a whole lot of minty kisses. Our mint chip love came to a crashing stop when Arren was conceived, almost as soon as he was our little sesame seed, my hatred for mint kicked in. It gave me heartburn, it smelled bad and it increased my nausea to levels you would not believe. After Arren was born and my love for mint returned, a new hurdle laid in front of me. Mint, decreases milk supply, it’s been a long year without mint, but now I just live vicariously through Carl. He will happily try all my minty recipes, and I’ve come to appreciate the delicious aroma of mint even more.
This mint chip ice cream is out of this world ( I had a little taste), if you’re a mint lover that is. It’s the perfect combination of mint and chocolate to make you’re little mint loving heart do flops in your chest, but this recipe is guilt free and really easy to make. The key to this recipe is to find a mint extract that you enjoy. I’ve had some bad run ins with some bad mint extract in my time, but I finally found one that was just the right mint flavor for me.

MINT CHIP NICE CREAM – serves 2
- 2 large bananas, peeled, chopped and frozen until firm
- 1 cup washed spinach
- 3- 5 tbsp milk to get things moving
- 1 tbsp sweetener
- 1/4 tsp – 1 tsp mint extract
- 1/2 cup chocolate chips
In a blender add the bananas, spinach, milk and extract. Blend until the consistency of soft serve.
Taste and adjust mint extract. Add sweetener and chocolate chips and blend until well incorporated. Serve and enjoy immediately.
