Black beans are a staple in our house. It’s that one ingredient we just can’t live without , well maybe we could, but we would all be very upset. The littlest member of our family would be the most upset
Arren loves his black beans, it’s the one thing he will always eat. It’s that special something that I can smash anything in and because it looks like, and taste like black beans he will devour it. For that reason we have a pretty big stash of black beans in our house and with that comes a lot of black bean recipes….
In actual fact we have one black bean recipe that’s constantly on repeat. This black bean burrito bowl is a once a week meal in our house, maybe more when Arren gets exceptionally picky. It’s so easy to make, takes really fast! especially if you have leftover rice or quinoa in your fridge and you can customize it with any vegetables you have on hand. Sometimes I steam vegetables other times I roast some vegetables the possibilities are endless with this easy burrito bowl.
EASY BLACK BEAN BURRITO BOWL – serves 4
- 1 can black beans, drained and rinsed
- 1 tsp cumin
- 1 tsp coriander powder
- 2 cloves garlic minced
- 1/2 tsp oregano
- 1/4 – 1/2 tsp cayenne pepper
- 1/2 tsp chilli powder (optional)
- 1/4 cup water
- salt and pepper to taste
- shredded lettuce
- salsa or chopped tomato
- steamed vegetables
- rice or quinoa
Add the top 9 ingredients to a pot and bring to a low simmer, stir continuously until heated through. Smash some of the beans for texture. Taste and adjust seasoning.
Add quinoa or rice to a bowl, top with black beans add remainder of the ingredients. Squeeze over some lemon juice. Serve Immediately.
