When I think about easy recipes, pasta is the first thing that comes to my mind, but that doesn’t mean that it has to be unhealthy. This cheesy roasted cauliflower pasta sauce, is out of this world good, but doesn’t contain any heavy ingredients.
This sauce is so good, you won’t want to stop spooning it into your mouth straight out of the blender! It’s hard to believe that the humble cauliflower can make such a creamy pasta sauce, that’s cheesy and can fool even the pickiest of eaters into eating their veggies.
Not that you would want to fool anyone, I find great satisfaction in waiting until people have taken a bite out of my food, raved about how good it is and then hit them with the HA, it’s healthy bomb.
Call it deceiving, but I’m just looking out for everyone’s health. When someone tells me they don’t like a vegetable I make it my mission to find a way for them to like it. If you can sneak it into a meal you best believe I’ll be serving you something you don’t like.
This recipe is incredible easy, fast and delicious. All of the things I look for in a recipe. I used gluten free quinoa pasta for added protein and added in some spinach for even more of a healthy kick, you can even add some broccoli or whatever other vegetable you have on hand. Maybe you’re a purest, I ain’t judging, you do you, but just make this recipe! IMMEDIATELY
CHEESY ROASTED CAULIFLOWER PASTA SAUCE – serves 4-5
- 5 -6 cups cauliflower florets
- 7 garlic cloves unpeeled
- 1/4 tbsp coconut oil or oil
- 1 tsp onion powder – optional, but adds pezazz
- 1/4 tsp dry mustard
- 1/2 cup vegetable broth
- 1/2 cup nutritional yeast or Parmesan
- salt and pepper to taste
- cooked pasta
Preheat oven to 425 degrees F.
Add the cauliflower, garlic and oil to a baking sheet.
Bake for 12 – 14 minutes until tender.
Place the cauliflower into a blender. cut the tops of the garlic, and squirt the garlic paste into the blender. Add the rest of the ingredients and blend.
Taste and adjust seasoning. Reheat if necessary. Serve over pasta.
