Bounty Bar Overnight Oats

Overnight oats is the breakfast of champions.  The breakfast for the seriously lazy, the breakfast that will make all time cruncher rejoice and the breakfast that’s so good, you will want to eat it all the time.

I’ve been all about overnight oats, some might think I don’t eat anything else, why would I when I can have banoffee pie, cherry bakewell or gingerbread for breakfast?  Instead of feeling bad about having dessert for breakfast, I do a little morning jig, knowing that I have so many good for me ingredients, piled into breakfast.

I find when I have a sweet breakfast  I don’t crave so many sweets during the day.

This time I think I’ve created it….My favorite breakfast! I know I say that every time, but jeez! This is good. Bounty bars is the ultimate chocolate-y coconut goodness, but this is the ultimate bounty bar overnight oats!  It tastes just like the real thing. Chocolate covered coconut oats, that will make you’re mouth water, making you wonder why you didn’t make any more, because second breakfasts are obviously a thing!  It’s so decadent, but doesn’t contain any refined sugars and will have you looking forward to breakfast every time you make this.

The best part about this recipe is, that it’s so easy to customise.  You can make it vegan, vegetarian.  You can sub the cocoa powder for cocao powder or even carob.  It’s all up to you!  All I know is that this is delicious and that everyone should make this tonight!

BOUNTY BAR OVERNIGHT OATS –  serves 1

Ingredients

  • 1/2 cup oats
  • 1/3 cup desiccated flaked coconut
  • 1/3 cup yogurt or 2 tbsp of chia seeds for vegan version
  • 1/2 cup milk of choice
  • 1 tsp vanilla
  • sweetener to taste (I prefer it without, the chocolate sauce makes it sweet enough for me)
  • 6 pitted medjool dates
  • 1/2 cup water or more to get things moving
  • 1 tbsp cocoa powder

Directions

In a jar add the oats, coconut flakes, yogurt, milk, vanilla and sweetener if using.  Stir well.  Cover and refrigerate overnight.

In a blender add the dates, 1/2 cup water and cocoa powder.  Blend until smooth.

In the morning top with chocolate sauce and enjoy.
