How was your weekend? I’ve been taking an unintentional break from social media.  Things have been hard for us here.  We realised Cape town is really not for us, no matter how beautiful it is to other people I literally feel like I’m in spirit prison here.  My ears are always popped, I’ve got insane sinus face pains that feels like Cape town is trying to squeeze my head in and kill me, every time we’ve gone for a walk I’ve been caught on barbed wire, that’s completely ruined my clothes or been harassed by beggars drunk out of their minds, trying not to get shocked by low hanging electric wires has also been a problem for me and the smell is just horrible.  Being woken up the whole time by the fog horn like I’m in the heart of mordor has not been easy, I’m running on no sleep, constantly uncomfy and in a lot of pain, but this to shall pass and everything will feel a okay again.

Its been raining  here for the last couple of days, and I’m loving these cooler days.  Its finally starting to feel a tad like winter, I would call it late fall kind of weather, but this will have to do.  So bring on the hot cocoa and cuddly days, with wonderful hikes that don’t require me to die of heat stroke!

Easy As Can Be Tomato Soup

I use to hate tomatoes when I was younger.  I had no problem with fresh tomatoes, but it was  cooked tomato I had a problem with.  They were always around to make everything soggy or weird tasting.  Thinking you’re going to enjoy your grilled cheese,  and wham! you’re hit in the face by a slap of hot tomato, that seems to have come from the depths of hell its so hot.  As I got older I decided to give tomato another chance, and boy was I glad I did.   I started liking tomato soup so much that when I saw it as the soup of the day at restaurants I would do a little mental dance, only to be disappointing by the thick weird heated pasta sauce with a slice of bread restaurants were serving me.   So of I set to find an easy, yet delicious recipe that would make my taste-buds happy, but also be really quick to prepare.  So if you’r looking for an easy as can be recipe, that’s really yummy and that will have you out of the kitchen in no time at all, this is the recipe for you.

EASY TOMATO SOUPserves 4

IMG_3019new

Ingredients

  • 2 tbsp butter/ margarine
  • 1 large white onion, diced
  • 4 cloves garlic, chopped
  • 1 can diced tomatoes
  • 2 tbsp flour
  • 3 cups vegetable stock
  • 1/2 tsp thyme
  • 1 tsp sugar or sweetener of choice
  • salt and black pepper to taste

Directions

In a large pot over medium heat add the margarine and let it melt.  Add the onion and garlic and saute until translucent and fragrant.   Add the flour and thyme and stir until it forms an almost paste slowly add the stock while stirring until the clumps are gone.  Add the tomatoes and let simmer on low for 1 minute.   Add sugar.  Remove from heat and let cool for a couple of minutes.

Puree the soup until soup and creamy taste and season with salt and pepper.

Serve with grilled cheese sandwich. Yum

Cape Point

On Saturday we headed to Cape point, the drive there felt insanely long and it didn’t help that the gps maps lady, decided to take us on the craziest route ever created.  We were zigzagging going through the navy base, feeling really awkward driving through military housing and somehow we got to the bottom feeling like we just trespassed on everyone’s property.  We made it in the end and it was glorious.

Cape point  is the most south-westerly tip of Africa, covered in fynbos, beaches, and beautiful little hikes and picnic areas.  We kept having to stop thanks to ostriches thinking they are slow moving cars and refusing to get out of the road and some how finding their way in front of the car every turn we made.  There is also a lot of baboon warnings around, we actually saw a baboon right as we got there, just chilling eating a slice of pizza, not a care in the world, as I tried to take my camera out it started making a dodgy looking stride towards me, so of course I ran away screaming like a little girl, while the baboon ran the other way obviously confused.

Being the cheap people we are we decided to give the “flying dutchman” or the little tram that can take you to the top in 3 minutes a skip and the walk up was great! we saw cute little mice and I found out that all the learn mandarin things I’ve been using are all a bunch of liars! They say that Asian people never say Ni hao………Well we saw all the tourists and I constantly heard everyone saying ni hao.  Lesson learned!

Walking to the top is a treat for the eyes! Panoramic views of the ocean makes you feel like you’ve fallen into a painting.  If Cape town could be any colour it would be blue.  Blue like the skies and the water, it always seem like everything is just blending together.

Happy Monday everybody! How was your weekend? Mine was good.  We’re busy, busy, busy.  Trying to figure out our future, and what we can do now to improve things.  Life is a whirlwind over here and we are just hoping to make it out in one piece!  We had a fun weekend filled with a visit to Cape point, hiking and Asian grocery store visits. Here is to another week!

Company’s Gardens

Company’s Garden is settled right in the heart of the city, and is a huge park with a rose garden, amazing vegetable garden and lots more.  You can’t forget to buy a pack of peanuts to feed to the crazy amount of squirrels following you around. It doesn’t feel all magical and Disney like as Ireland having squirrels following you around, these squirrels seemed rough and like they would take your wallet to go buy their own peanuts.  The views of table mountain is amazing from the gardens.

The gardens were established in 1650’s by Dutch settlers and has South Africa’s first cultivated pear tree that has stood in the gardens since 1652.

Personally the park was a little bit too intense for me, the constant harassment from beggars and  people who just assume your a tourist, trying to scam you was a little bit too much for me, but poverty is a big thing here, I would probably just give the gardens a skip next time.
